Ingredients

For the Dough:

  • 2 ¼ cups all-purpose flour

  • 1 packet (2 ¼ tsp) active dry yeast

  • ¾ cup warm water

  • 1 tsp sugar

  • 1 tsp salt

For the Topping:

  • 3 cups green cabbage, finely shredded

  • 1 small onion, thinly sliced

  • 2 tbsp butter or olive oil

  • 1 tsp caraway seeds (optional, but adds an authentic German flavor)

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp apple cider vinegar

  • 1 cup sour cream or crème fraîche

  • 1 ½ cups shredded cheese (Emmental or Gruyère for a traditional taste, or mozzarella if you prefer)

  • 6 slices of bacon, cooked and crumbled (optional, but recommended!)


Instructions

1. Prepare the Dough

In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until it becomes frothy.

In a larger bowl, combine the flour and salt. Add the yeast mixture and olive oil, and stir until the dough starts to form. Knead the dough on a lightly floured surface for 5-7 minutes, until smooth and elastic. Place the dough in an oiled bowl, cover it with a towel, and let it rise for about 1 hour, or until doubled in size.


2. Prepare the Cabbage Topping

While the dough is rising, heat butter or olive oil in a large skillet over medium heat. Add the sliced onions and cook until they’re soft and translucent, about 5 minutes. Add the shredded cabbage, caraway seeds, salt, and pepper. Sauté the cabbage for 8-10 minutes until it softens and starts to caramelize.

Once the cabbage is tender, stir in the apple cider vinegar and remove from heat. Let it cool slightly.


3. Roll Out the Dough

Preheat your oven to 425°F (220°C). Punch down the risen dough and roll it out on a floured surface into your desired pizza shape, about ¼-inch thick. Transfer the dough to a parchment-lined baking sheet or pizza stone.





4. Assemble the Pizza

Spread the sour cream or crème fraîche evenly over the dough, leaving a small border around the edges. Top with the sautéed cabbage and onion mixture, spreading it out evenly. Sprinkle the shredded cheese on top, and if you’re using bacon, scatter the crumbled pieces over the pizza.


5. Bake to Perfection

Bake the pizza for 15-20 minutes, or until the crust is golden and the cheese is melted and bubbly.


6. Serve and Enjoy

Once out of the oven, let the pizza cool for a few minutes before slicing. Serve warm, and enjoy the combination of crispy crust, tangy cabbage, creamy sour cream, and melted cheese.
